History
Giacomo Grassi is a Tuscan producer who honors traditional methods in Vin Santo production. Selected grapes are naturally dried, and the wine matures in small wooden barrels, following time-honored techniques. This approach imparts distinctive characteristics and a strong connection to the region.

Vinification
Grapes are dried on racks for several months, concentrating sugars and aromas. After pressing, the must ferments slowly in small wooden barrels, where the wine ages for years, developing complexity and depth.

Nose: aromas of dried fruits, honey, sweet spices, and elegant oxidative notes.
