History
Umani Ronchi has long been committed to preserving and promoting Italy’s native grape varieties. Vellodoro, first released with the 2007 vintage, comes from organically farmed vineyards in Roseto degli Abruzzi overlooking the Gran Sasso, complemented by carefully selected vineyards in northern Chieti. Clay-sandy soils and marked day-to-night temperature variations give the wine elegance, minerality and aromatic complexity.
Grape variety
100% Pecorino.
Vinification
The grapes are hand-harvested during September to preserve their naturally high acidity. After gentle pressing, the free-run juice is rapidly cooled and clarified through static settling. Fermentation takes place in stainless steel tanks at controlled temperatures between 16°C and 18°C for approximately 10–15 days without malolactic fermentation. The wine then ages for around four months on its fine lees in stainless steel before bottling.

12.5%.
Tasting notes
Bright straw yellow in colour. The bouquet offers intense aromas of flowers and ripe fruit enriched by pronounced mineral notes. On the palate it is fresh and well-structured, showing ripe fruit flavours, lively salinity and a long, harmonious and persistent finish.
Food pairings
Excellent with seafood starters, fish-based pasta dishes, shellfish, grilled fish, white meats, fresh cheeses and legume soups. Its structure also makes it an ideal companion to refined Mediterranean cuisine.
