History
Cantina Santadi was founded in 1960 in the Sulcis area of southwestern Sardinia by a group of growers committed to promoting the Carignano grape, the historic symbol of the region. The vineyards are planted on sandy, clay-rich and calcareous soils, often trained as bush vines and influenced by sea breezes that ensure full ripening while preserving freshness. Grotta Rossa has become one of the winery’s most historic and representative labels, widely regarded as a benchmark for Carignano del Sulcis.

Vinification
The grapes are hand-harvested between late September and early October. Fermentation takes place at controlled temperatures between 25 and 30°C with skin maceration to extract colour, structure and aromatic depth. The wine then ages in concrete and stainless steel tanks without heavy oak influence, preserving the fruity and Mediterranean character typical of Carignano del Sulcis.

Tasting notes
Deep ruby red with intense reflections. Aromas of ripe red fruit, black cherry, blackberry and plum are accompanied by elegant notes of liquorice, sweet spices, tobacco and subtle balsamic nuances. On the palate it is smooth, warm and enveloping with velvety tannins, savoury freshness and a persistent finish recalling ripe fruit and Mediterranean spice.

Pairs beautifully with rich pasta dishes, ragù sauces, grilled red meats, roasts, light game, lamb, aged pecorino cheese and traditional Sardinian cuisine. Also excellent with barbecue and rustic flavourful dishes.
