History
Founded in 1665 in Salice Salentino, Leone De Castris is one of Southern Italy’s most historic wineries. After creating the famous Five Roses, considered the first bottled rosé wine in Italy, the winery also embraced traditional-method sparkling wine production, showcasing Negroamaro in an elegant and contemporary style. This sparkling rosé represents the meeting point between Salento tradition and high-quality sparkling winemaking.

Vinification
The grapes are harvested early to preserve freshness and natural acidity. Following a short skin maceration to obtain the delicate rosé colour, the base wine ferments in temperature-controlled stainless steel tanks. Secondary fermentation takes place in bottle according to the traditional method, followed by extended lees ageing to develop aromatic complexity, creamy texture and fine bubbles.

Tasting notes
Pale pink with copper reflections and a fine, persistent mousse. Aromas of wild strawberry, pomegranate, red currant and citrus peel are complemented by elegant notes of bread crust and pastry. On the palate it is fresh, harmonious and savoury, with creamy bubbles, vibrant acidity and a long refined finish.
Food pairings
Perfect as an aperitif, it pairs beautifully with raw seafood, shellfish, tuna tartare, sushi, seafood risottos and Mediterranean cuisine. It is also excellent with delicate cured meats and fresh cheeses.
