History
The Cavanera range was created by Firriato to showcase the unique identity of Etna’s finest Contrade through single-vineyard wines. Contrada Zucconerò lies in Castiglione di Sicilia at approximately 780-800 metres above sea level. Its sandy volcanic soils, rich in stones and organic matter, together with the mountain climate and significant day-night temperature variations, allow Nerello Mascalese to develop exceptional finesse, complexity and longevity.

Vinification
The grapes are harvested by hand in small crates during the third decade of October. Traditional fermentation with extended skin maceration is followed by 18 months of ageing in French oak tonneaux and at least 12 months of bottle ageing, creating remarkable complexity, refined tannins and outstanding balance.

Tasting notes
Brilliant ruby red with garnet reflections. The bouquet reveals aromas of plum, blackberry and red berries, enhanced by dried rose, black pepper, nutmeg and distinctive volcanic mineral notes. On the palate it is rich, elegant and structured, with silky tannins, vibrant freshness and an exceptionally long finish featuring ripe fruit, spice and flinty minerality.
Food pairings
An excellent match for beef fillet, roast lamb, game, braised meats, porcini mushrooms, truffle dishes and aged cheeses. Its structure and elegance also make it an outstanding meditation wine and an excellent candidate for long-term cellaring.
