History
Produced by Farina, a historic winery based in the Valpolicella Classica region, this passito bianco is crafted from carefully selected white grapes that are dried to concentrate sugars and aromas. The 2022 vintage reflects Farina’s tradition of balance and quality, enhancing varietal expression and harmonic sweetness.
Grape variety
Blend of Veneto white varieties: Garganega, Trebbiano, Malvasia, Chardonnay, Pinot Bianco
Vinification
Grapes are harvested at optimum ripeness and dried to concentrate sugars and aromatics. Fermentation is carefully managed, followed by about 6 months ageing in small new oak barrels and stainless steel, with further bottle ageing to refine complexity and harmony.
Alcohol content
Approx. 14% vol.
Tasting notes
Deep golden yellow. On the nose: honey, vanilla, candy and sweet spice notes such as cinnamon, with mature fruit hints. The palate is sweet, enveloping and complex, with a refined balance of sugar, acidity and persistent aromatic richness.
Food pairings
Pairs superbly with fruit-based desserts, traditional Venetian pastries, rich cakes, aged and spicy cheeses, honey and mustard accompaniments. Also excellent served chilled with white chocolate desserts or enjoyed as a contemplative wine.
