History
Bramìto della Sala originates from the historic Castello della Sala estate, owned by the Antinori family and located in Umbria, approximately 18 kilometres from Orvieto. The medieval castle overlooks an estate covering around 600 hectares, including 229 hectares of vineyards, situated at elevations between 220 and 470 metres above sea level. The predominantly clay and limestone soils are rich in ancient marine fossil deposits, contributing to the distinctive mineral character of the wines. Significant temperature variations between day and night, together with favourable vineyard exposures, create excellent conditions for cultivating white grape varieties, particularly Chardonnay. The first vintage of Bramìto was produced in 1994, when the Antinori family sought to highlight this grape through an interpretation combining international elegance with a strong sense of place. Over the years, Bramìto has become one of the estate’s most recognisable wines, complementing the renowned Cervaro della Sala with a more approachable and immediately expressive style.
Grape variety
100% Chardonnay.
Vinification
The 2025 Chardonnay harvest began around mid-August and continued until the first week of September, following favourable weather conditions that encouraged gradual and balanced grape ripening. Upon arrival at the winery, the grapes were destemmed and gently pressed. The must, still in contact with the skins, was cooled to approximately 10 °C for a short maceration lasting 2-4 hours, enhancing its aromatic expression. After clarification in stainless steel tanks, the different lots were transferred partly to oak barrels and partly to stainless steel vessels, where alcoholic fermentation took place at controlled temperatures of 16-18 °C. Only the portion fermented in oak underwent malolactic fermentation, developing additional roundness and complexity. The separate lots were subsequently blended and bottled, resulting in a balanced, fresh and harmonious Chardonnay.

Tasting notes
Bright straw yellow with delicate golden reflections. The nose reveals a refined and fresh bouquet of yellow apple, broom flowers and subtle citrus notes. With aeration, more complex nuances of dried fruit and delicate pastry aromas emerge, enriching the aromatic profile without overwhelming its freshness. The palate is balanced, smooth and precise, with gentle roundness supported by lively acidity and a distinctive savoury character. The finish is elegant and persistent, with a delicate hint of salted almond highlighting the wine’s mineral identity. A refined Chardonnay that successfully combines aromatic purity, structure and excellent drinkability.
Food pairings
Bramìto della Sala 2025 is particularly well suited to fish, shellfish and seafood dishes. It pairs beautifully with seafood risotto, linguine with scampi, spaghetti alle vongole and oven-baked fish with aromatic herbs. Its balanced structure also makes it an excellent match for delicate white meats, roast chicken, herb-seasoned veal and vegetable-based dishes. It is particularly enjoyable with fresh and soft cheeses such as robiola and goat’s cheese, as well as refined appetisers and fish tartare. Thanks to its freshness and appealing savoury finish, it can also be served as an aperitif. Best enjoyed at approximately 10-12 °C.
