History
Domaine Olivier Boussard is a family-owned estate located near Chablis. Olivier Boussard became the first winemaker in his family and gradually expanded the estate over the years. Today the domaine cultivates vineyards around Venoy and Beines, producing wines that express the purity and identity of Burgundy terroirs.

Vinification
The wine is produced from the estate’s oldest Chardonnay vines. Fermentation takes place under controlled temperatures, followed by ageing mainly in stainless steel with a short period in oak barrels. This approach preserves freshness while adding texture and complexity.

Tasting notes
Bright straw yellow with golden reflections. The bouquet reveals white peach, ripe apple and citrus aromas alongside subtle hints of vanilla and butter from the oak ageing. On the palate it is balanced, smooth and fresh, with a mineral backbone and an elegant finish marked by white fruit and delicate toasted notes.
Food pairings
Excellent as an aperitif and with shellfish, grilled fish, white meats, foie gras, bloomy-rind cheeses and delicate poultry dishes. Its texture also makes it a fine companion for creamy seafood dishes and risottos.
