History
The ancient 19th century villa of 1000 square meters offers breathtaking views of the hills of Volterra and the Val di Cecina. Today in this context stands the Sorbaiano farm, one of the largest and most renowned in the whole area; the lands are particularly suited to the production of quality red and white wines, enjoying a very favorable influence given the proximity to the sea. All production is certified organic. The company also has a thriving tourist reception business. The property belongs to the Picciolini family, builders of Siena, but is currently rented to 3 other partners for the management of the estate.

Production method
The company harvests grapes at different times of the year depending on the variety. They use traditional vinification methods in stainless steel containers and fermentation is controlled at a set temperature. The wine then goes through a 15-20 day maceration on the skins, is drawn off, and decanted into barriques for malolactic fermentation. After aging for 12-18 months in barrique, the wine ages in the bottle for a minimum of 12 months. The wine is produced only in the best years and released after several years to allow it to reach its optimal expression.

Tasting notes
Dark ruby red color with garnet rim. On the nose aromas of very ripe, almost cooked berries, dried violets, peppers, mixed sensations of vegetable, mineral and balsamic with notes of intense spices of black pepper, cloves, cinnamon and vanilla. On the palate it is robust, warm, ripe and enveloping, with lively acidity and silky tannins on the finish.
Possible combinations
Sorbaiano Rosso delle Miniere is the great pedigree wine that the Montescudaio DOC offers us, a great enhancement of Sangiovese combined with black Malvasia and Cabernet Franc. For us it is an excellent meditation wine, even if it goes great in combination with hearty and tasty dishes based on red meat or game. Able to express itself at its best even in combination with selections of tasty cheeses.
