History
Cascina Fonda is based in Neive, in the province of Cuneo, in the heart of the Asti Spumante area. The company was founded in 1963 by Secondino Barbero, although it will be the two sons Marco and Massimo who, starting from 1988, will implement the production and quality of the latter time, increasing sales and exporting to many countries abroad .
Grapes used
White Muscat of Canelli 100%
Production method
The grapes are harvested and immediately transported to the cellar where they are immediately pressed and destemmed. Vinification is then traditional in white at a controlled temperature of about 16°C. The subsequent fermentation, responsible for the second fermentation, takes place according to the Charmat Martinotti method in an autoclave with the addition of selected yeasts. The product is subsequently cold stabilized, bottled and after a few months of rest, it is actually placed on the market.
