History
Mons Driadalis is a small winery established in the Greve in Chianti area, inspired by a passion for viticulture and a desire to produce wines that express their place of origin. The project began with a small domestic vineyard of approximately 300 Merlot vines before expanding through a Sangiovese vineyard within the Chianti Classico area. Alongside its still wines, Amigdala reflects the producer’s interest in exploring sparkling winemaking while retaining a connection to Tuscany’s signature grape variety. Its distinctive name sets it apart within an artisanal range focused on individuality and limited production.
Grape variety
100% Sangiovese.
Vinification
Amigdala is produced from Sangiovese grapes using the traditional method, which involves an initial fermentation to create the base wine followed by secondary fermentation in the bottle. This second fermentation naturally generates the bubbles, while subsequent contact with the lees contributes to aromatic complexity and texture. After maturation, the bottles undergo riddling and disgorgement to remove the deposits formed during fermentation. This process enhances Sangiovese’s natural freshness and gives the sparkling wine its distinctive character.
Alcohol content
To be confirmed from the bottle label.
Tasting notes
The expected profile is that of a refreshing sparkling wine with lively bubbles and a fruit character reflecting the nature of Sangiovese. The nose may reveal red berries, citrus and delicate floral nuances, potentially accompanied by hints of bread crust from lees ageing. On the palate, the grape’s natural acidity can contribute to a vibrant, balanced and food-friendly character, with a fresh, savoury finish.
Food pairings
Ideal as an aperitif alongside crostini, delicate cured meats, fresh cheeses and traditional Tuscan appetisers. Its freshness and traditional-method bubbles also make it an appealing match for fried vegetables, fish, shellfish and white meat dishes. It can also accompany delicate risottos, focaccia and Mediterranean cuisine, offering an original alternative to more conventional sparkling wines. Best served at around 8-10 °C.
