History
The Sandro Fay agricultural company was founded in 1973 by Sandro Fay, who decided to develop his family’s wine production business. In 1998 his children Marco and Elena joined the company. The company area covers about 15 hectares of land. Valtellina is the largest mountain terraced winegrowing area in Italy and the indigenous variety grown is Nebbiolo, known as Chiavennasca. The Fay vineyards extend over a total area of about 15 hectares, concentrated above all in the Valgella sub-area. This is one of the five sub-zones of the Valtellina Superiore DOCG denomination and is characterized by small streams called “Valgel”. The soils on which the vines grow are mainly sandy (about 70%) and silty (about 18%), without clay and limestone, with an acid pH between 4.5 and 5.5. Coming from flaked granite formations, they have a thickness that varies from less than 1 meter to a few metres.

Production method
The training system used is Guyot and Sylvoz Valtellinese. The production area is Valgella, Municipality of Teglio, with vineyards below 450 m asl, facing south. The soil is made up of sand (70%), silt (20%) with acid pH. The harvest is 40 hl/ha and takes place in the second half of October. The vinification involves alcoholic fermentation in steel tanks, followed by malolactic fermentation and maturation in oak barrels for 12 months.

Tasting notes
The Nebbiolo di Valtellina della Valgella has an intense ruby red color with garnet reflections. The nose offers an intense and complex bouquet, with hints of ripe red fruit, spices, floral notes and light woody hints. On the palate it is balanced and harmonious, with delicate and well integrated tannins, and a pleasant freshness that supports its drinkability. The aftertaste is long and persistent, with pleasant notes of dried fruit and spices.
Possible combinations
It goes perfectly with red meat dishes, game, aged cheeses and typical Valtellina dishes such as pizzoccheri and venison stew.
