History

Toscana IGT “Vie Cave” 2017 Fattoria Aldobrandesca Antinori 75 cl bottle is a red wine produced by the Antinori family at Castello della Sala. The Antinori family has been producing wine for more than 25 generations, exactly since 1385, and today owns many estates scattered throughout the region, Italy and the world. Fattoria Aldobrandesca is located in the southern Maremma, near Sovana, in the center of what is known as the “Etruscan area”. The name of this estate derives from the Aldobrandesca family, to which the estate went in the distant 594 on concession of the Lombards. The lands are located in the middle of an amphitheater which today is a real open-air museum and are mainly composed of tuff and manye also ar of volcanic origin.

Production method

The freshly harvested grapes are destemmed and softly pressed and are placed in stainless steel containers for fermentation. The first phase of this process is carried out at low temperatures, in order to preserve some aromatic characteristics of the fruit, subsequently it is raised to allow the use of yeasts. The maceration lasts about a week. After fermentation, the wine is transferred to barriques where it undergoes malolactic fermentation and ages for about 10 months. This will be followed by a period of rest in the bottle for another 12 months before being placed on the market.

Tasting notes

It has an intense ruby red color. The nose is complex and full, notes of ripe red fruits are distinctly perceived, such as cherry, plum and currant together with spicy notes of cloves and vanilla. On the palate it is round and velvety, but then shows a good general alcohol content, acidity and tannins. The finish is long and fades again to spices such as licorice, bitter chocolate and vanilla.

Possible combinations

Vie Cave is a structured and intense wine, it lends itself very well to combinations with rich and hearty dishes based on medium-cooked red meat, or with aged cheeses.
